Ratatouille …. with Beef
Courgettes, sweet red peppers and tomatoes with their lovely bright colours always remind me of sunny holidays. The first time I had Ratatouille was on a lovely holiday to Orvieto in Italy and I've loved it ever since. I often
make it into a complete meal by adding minced beef - it's always eaten with crusty rolls or warm ciabatta.
1. Wash and cut the courgettes, peppers and tomatoes into large chunks.
2. Saute the minced beef. Add 2 tablespoons of flour and cook for 2 minutes then add 1 tablespoon of Smoked Paprika seasoning and 200 mls water. Add a pinch of chili powder for extra bite.
3. When the mix thickens put it into an ovenproof dish and sprinkle with grated cheese. Freshly grated is always best.
4. Cook in the oven 180°C for about 20 minutes until the vegetables are cooked .....
..... and the cheese has melted.
Serve with crusty rolls or warm ciabatta and a glass of wine.
