Cut Lemon Cake

A simple old fashioned Loaf Cake .... use whatever citrus fruits you prefer - lemon, orange or lime or a combination of any or all of them. I also added a teaspoon of caraway seeds just because we like them. Quick and easy to make and it stores well if there's any left - there never is in our house!

Ingredients * 6 ozs. S.R. Flour * 4 ozs. Butter or Margarine * 6 ozs. Caster Sugar * 2 Large Eggs * 6 Tbsp Milk * Zest of Chosen Citrus Fruit   ICING * Juice from Fruit * 2 ozs. Caster Sugar   1. I put all the cake ingredients in a big bowl.

2. Then I whisked them all up together til it looked creamy.

3. The loaf tin was lined and the cake was cooked at 180°C for 35 mins. Tested with a wooden kebab stick. Make about 20 holes in the cake with the stick.

4. Heat the remaining sugar with the fruit juice then slowly pour over the cake. Try to get some into the crack that appears on the top and the holes. Cool in the tin.

Serve in slices with family, friends and a cup of tea and try to save some for tomorrow.
