Old Fashoined Fruit Rock Cakes

Who doesn't like a good old fashioned Rock Cake? I've only ever come across one person who didn't like dried fruit so they sat and took them all out and enjoyed the cake anyway. Quick, easy and cheap to make, these cakes never get as far as the cake tin here in the scullery.

Rock Cakes are also great to make with the kids as they are not at all delicate or fussy - perfect for little hands to make.

  • 1. Sieve the flour and using your fingertips, quickly and lightly rub the margarine into it until it looks like breadcrumbs.  Heat the oven to 190°C.
  • 2. Add the sugar, dried fruit and a pinch of salt and mix it all together. Beat the egg and add it to the mix - the mix should be stiff so add no more than a tablespoon of milk if it's necessary.
  • 3. Put rough heaps of the mix on the baking tray and sprinkle with the brown sugar. Bake the cakes for 10-15 minutes until golden.
  • 4. Cool on a wire rack.
Enjoy warm or cold with a cup of tea and friends.
