Rock Cakes are also great to make with the kids as they are not at all delicate or fussy - perfect for little hands to make.
- 1. Sieve the flour and using your fingertips, quickly and lightly rub the margarine into it until it looks like breadcrumbs. Heat the oven to 190°C.
- 2. Add the sugar, dried fruit and a pinch of salt and mix it all together. Beat the egg and add it to the mix - the mix should be stiff so add no more than a tablespoon of milk if it's necessary.
- 3. Put rough heaps of the mix on the baking tray and sprinkle with the brown sugar. Bake the cakes for 10-15 minutes until golden.
- 4. Cool on a wire rack.
Enjoy warm or cold with a cup of tea and friends.
