- I allow 2 whole heads of garlic for each person.
- Olive Oil, Salt & Pepper
- Wash the garlic - do not peel but leave it whole.
- Put into a small dish oiled with a tablespoon of olive oil.
- Cook in a hot oven whilst the roast potatoes are cooking for around 30 minutes.
- Mix some salt & pepper with a little water and sprinkle over the garlic a few times during cooking.
- Serve with the roast - the garlic will be soft, creamy & mild and unlike garlic cooked by any other method.
