Recipe: 30 mins Broccoli Bake


A quick, easy and healthy lunch dish. Great for non-meat eaters and meat eaters alike. The broccoli can be replaced by cauliflower for a change or use both. I sometimes add part cooked potatoes and/or sweetcorn to ring the changes.

  1.  Wash and cut the broccoli into florets, halve small Roma cherry tomatoes and slice a mozzarella and some feta cheese.
  2.  Make a basic bechamel sauce and flavour with a pinch of onion powder.
  3.  Put the vegetables into a shallow ovenproof dish and cover with the sauce.
  4.  Put the cheeses on the top and cook in a pre-heated 180°C for approx. 30 minutes.

Serve with meat or not, a salad and garlic bread.
