|A tasty budget midweek meal with the minimum of work and time. Ideal as a side dish and a tasty meal for vegetarians. I serve this with jacket potatoes and/or crusty bread and a pork chop for the meat eaters.|
~1. Wash and slice the courgettes and tomatoes. 3. Heat the cream then add the tomatoes and simmer for 3 mins. Put into an ovenproof dish and sprinkle with grated cheese. Freshly grated is always best. 4. Cook in the oven 180°C for about 15 minutes until the vegetables are cooked .....
..... and the cheese has melted.
Serve with jacket potatoes and/or crusty bread, a glass of wine and friends.
