Recipe: 15 minutes Cheese Ratatouille

Baked Cheese RatatouilleA tasty budget midweek meal with the minimum of work and time. Ideal as a side dish and a tasty meal for vegetarians. I serve this with jacket potatoes and/or crusty bread and a pork chop for the meat eaters.
 
Cheese Ratatouille Recipe

1. Wash and slice the courgettes and tomatoes.

2. Saute the courgettes in olive oil until slightly softened and lightly browned. Sprinkle with a tablespoon of flour, mix and then add the cream and herbs.

Sprinkle Cheese on the TopBaked Cheese Ratatouille 3. Heat the cream then add the tomatoes and simmer for 3 mins. Put into an ovenproof dish and sprinkle with grated cheese. Freshly grated is always best. 4. Cook in the oven 180°C for about 15 minutes until the vegetables are cooked .....

..... and the cheese has melted.

Serve with jacket potatoes and/or crusty bread, a glass of wine and friends.
