Weekday Chicken Casserole
A nice, easy weekday casserole which can be cooked on the hob or simmered in the oven. Like most casseroles this one has the basic onion and carrots. Add to this whatever vegetables you prefer or have in the fridge - I've used leeks and sweet red pepper. It's good with mushrooms, too.
1. Coat the chicken peices in seasoned flour and brown in olive oil. Turn and add the chopped vegetables.
2. Add the wine and stock then simmer on the hob for 90 minutes or cook in the oven 180°C for the same time.
3. If there is too much liquid at the end of the cooking time reduce it by simmering - without a lid - on the hob.
A good mid week casserole that's easy to prepare and can be cooked in a slow cooker if you prefer. Cook on low for 4-6 hours. Serve with potatoes, rice or pasta.
