Oven Roasted Vegetables with Maple Syrup

Oven Roasted Vegetables with Maple Syrup

I enjoy vegetables in all shapes and forms but I particularly like oven roasted veg. Bright, fresh vegetables cooked with olive oil and herbs until just cooked, still crunchy and basted with maple syrup ..... a meal on it's own or serve with meat or fish for the non-vegetarians in the family.
