Split Pea Soup

It's dark, windy and raining tonight and the South of England has been hit by a hurricane with winds up to 105 miles an hour.  What can be more warming and welcoming than a big bowl of Split Pea Soup with Dumplings?  Thick and hearty, this is comfort food at it's best.

Split Pea Soup
  1. 8 ozs. split peas
  2. 1 onion diced
  3. 2 carrots chopped
  4. 1 large potato diced
  5. 6 - 8 ozs. bacon chopped
  6. 1 litre stock or water - boiling
  7. Black pepper
  1. Rinse the peas in plenty of running water.
  2. Place all the ingredients into a slow cooker and cook on high for 3 hours and then low for another 3 - 5 hours.
  3. If cooking on the cooker put everything in a large pan, bring to the boil and simmer for an hour or so until the peas are soft.
  1. * Yellow or green peas can be used.
  2. ** Dumplings
  3. 6 ozs. S.R. flour
  4. 3 ozs. suet
  5. 2 teasp. dried herbs - optional
  6. Mix the flour, suet and herbs if using.
  7. Add enough cold water to mix to a soft dough. Mix quickly and gently.
  8. Drop tablesps. of the mix into the soup and simmer, covered, for the last 30 minutes or so of cooking.
