Sticky Orange Marmalade Cake

It's been a long time since I posted a cake recipe but  hopefully this one will make up for the wait.   The recipe for this really orangey marmalade cake came from Mary Berry's The Great British Bake Off  recipe book.  The cake was easy to make and came out well but next time I would leave out the icing - no good for my teeth!

Sticky Orange Marmalade Cake
  1. 175 grams butter, softened
  2. 175 grams caster sugar
  3. 3 large eggs beaten, at room temperature
  4. 175 grams S.R. flour
  5. Pinch of salt
  6. Half teasp. baking powder
  7. 3 tablesps. chunky Seville orange marmalade (I used Frank Coopers)
  8. 2 tablesps. milk
  1. Heat the oven to 180°C.
  2. Beat the butter with a mixer for 1 minute or until creamy.
  3. Gradually beat in the sugar and beat until the mixture is pale & fluffy.
  4. Gradually beat in the eggs adding 1 tablespoon of flour with the last portion.
  5. Gently fold in the flour, salt & baking powder with a large metal spoon.
  6. Gently stir in the marmalade & milk.
  7. Spread into a greased & base lined 20 cms. cake tin.
  8. Bake for 50-55 minutes until a good golden brown & firm to the touch.
  9. Remove from the tin and spread on 3 tablespoons of warmed marmalade.
  10. Leave to cool completely.
  11. Sift 100 grams icing sugar into a bowl and mix to a runny icing with 2 tablespoons of warm water.
  12. Spread the icing over the cake letting it run down the sides.
  13. Leave to set before cutting. Store in an airtight container and eat within 5 days.
