  1. 2 eggs
  2. 250ml vegetable oil
  3. 180g caster sugar
  4. 275g plain flour
  5. 1 tsp. ground cinnamon
  6. 1 tsp. bicarbonate of soda
  7. 1 tsp. vanilla extract
  8. 500g cored, peeled and diced apple
  1. Preheat oven to 180 C / Gas mark 4.
  2. Line a 20x30cm cake tin.
  3. Beat vegetable oil and eggs to a thick foam.
  4. Add the dry ingredients and vanilla. Mix together gently with a metal spoon.
  5. Stir in the diced apples.
  6. Spoon the very thick mixture into prepared tin.
  7. Cook for 50 - 60 minutes until nicely browned.
  8. Cool cake in tin for 10 minutes before removing.
  1. **Nice on it's own - nicer with custard**
