Chicken Tagine

  1. 2 chicken thighs
  2. 3 shallots, sliced
  3. 1 clove of garlic, chopped
  4. 1 teasp. prepared ginger
  5. 1 teasp. cinnamon
  6. 2 teasps, ras-el-hanout
  7. 1 cinnamon stick
  8. Salt & pepper
  9. 3 carrots cut into thick fingers
  10. Half butternut squash, cubed
  11. 2 small chilis, chopped
  12. Dates & apricots
  13. 8 olives, halved
  14. 2 tablesps. runny honey
  15. 300 mls. chicken stock
  1. Heat the oven to 180°C Gas Mark 4.
  2. Fry the chicken til brown then remove from the pan.
  3. Fry the shallot and garlic.
  4. Add carrots and squash and fry for 1-2 minutes.
  5. Add the spices and fry for 1 minute.
  6. Put the chicken back and coat with the spices.
  7. Add honey and stock.
  8. Add dates, apricots, olives and chilis.
  9. Put in the tagine and cook for approx. 2 hours.
  1. Serve with cous-cous.
